A Baja Chef Born Into Tijuana's Kitchens
Javier Plascencia was born in Tijuana, Baja California, and worked in his family's restaurants from childhood. His earliest lessons came in those kitchens, where cooking was a daily rhythm woven into the household. That upbringing rooted his identity in the peninsula's land and sea.
From Caesar's to Valle de Guadalupe
Javier's early kitchen life ran through Giuseppis, Caesar's, and Saverios. That sense of place carried into his later restaurants.
At Misión 19 in Tijuana, his Baja California style came into focus. His cooking draws on Baja Mediterranean, a style that blends Mexican and Mediterranean influences with local ingredients and the bounty of nearby land and sea.
At Finca Altozano in Valle de Guadalupe, that sensibility meets wine country and open fire. From there, he carried the approach further down the peninsula to Jazamango in Todos Santos, in Baja California Sur. Across these venues, Plascencia emphasizes respect for regional produce and honest preparation tied to the waters that produced the food.

The Michelin Star Behind the Menu
His restaurant Animalón, set beneath a centuries-old oak tree in Valle de Guadalupe, earned a Michelin star in the inaugural Michelin Guide Mexico 2024, one of just 24 establishments in the country to receive that honor.
A Michelin star is not given lightly. Inspectors weigh five universal criteria and visit multiple times before any decision. The recognition rewards the cooking itself.
Today, the daily kitchen at Animalón is led by executive chef Oscar Torres, Plascencia's son-in-law, while Javier remains the creative force behind the restaurant. That same vision now informs the menus aboard Cabo Adventures.

Plascencia lets the sea and the land guide the menu. The Sea of Cortez, the body of water Jacques Cousteau called "the world's aquarium," is central to a cuisine shaped by fresh seafood across the peninsula. That same philosophy now shapes what guests taste aboard Cabo Adventures.
